Hachinohe mackerel is landed directly at the Maki net fishing market at Hachinohe Fishing Port and auctioned there.

When Aji no Kakunoya's connoisseurs bid on it as middlemen, they immediately select it, transfer it to a tank of ice water, and transport it to the factory, which is just around the corner. It takes as little as half a day from catching to arriving at the factory. This short lead time guarantees the freshness of the ingredients, which no high-end restaurant can imitate.

From the best mackerel to canned
The connoisseurs use their years of experience to select the freshest, most fatty, and healthy mackerel. There is an in-house standard for fat content (crude fat percentage), which is stricter than the standard for Hachinohe's brand mackerel, "Gin Saba," but that's not all.

From the mackerel that meets the in-house standard, they are further selected and canned in order from the best ones that weigh more than 600g each. Aji no Kakunoya's canned mackerel is a dish made with the finest Hachinohe mackerel.

Mackerel has the risk of losing its freshness.
At Aji no Kakunoya, we avoid this by strictly controlling temperature. We always purchase mackerel from fishing boats with fish tanks filled with ice water, and even during the short transport to the factory, we always use fish tanks filled with ice water.

In addition, all of our group's factories are HACCP certified by the Japan Fisheries Association, ensuring food safety and peace of mind.
