Extra peach jam 'Pche Des Vignes' (Vineyard Peaches). The vineyard peach is an ancient variety of peach, very rustic, which grows in poor soils where vines also thrive. The wording "extra", in accordance with the regulation, guarantees the use only of whole fruit, the absence of sulphur dioxide and preservatives. Agrimontana extra jams, without pectin, have a high fruit content: they contain from 70 to 95 grams per 100 grams of product (well over the minimum of 45 grams required by law for the denomination "Extra Jam"). The preparation stages involve cooking the fruit, adding the cane sugar and concentrating it in a vacuum at a low temperature. This is followed by hot filling of the container and rapid cooling. The fine jams in Agrimontana's "I Crus" range preserve the natural vitamin content of the fruit thanks to low-temperature cooking.
